Chocolate Brownies!

With white chocolate chips!

Ingredients:

  • 125g Plain flour
  • 200g Caster sugar
  • 3 Large eggs
  • 1 tsp Vanilla extract
  • 6 tsp Salt
  • 150g White cooking chocolate
  • 200g Butter (unsalted)
  • 50g Cocoa powder
  • 200g Dark cooking chocolate
  • Instructions:

  • Turn on your oven and preheat it to 180C/ 160C fan/ Gas mark 4! Line a baking tin with baking paper and grease it with butter or baking spray!
  • Break up the chocolate while its still in the packet, and add to a heatproof bowl along with the butter (cube it into decent sized pieces first!)! Put it over a simmering bain-marie, making sure the water does not touch the bottom of the bowl!
  • Stir occasionally until butter and chocolate have melted together and are smooth!
  • While the chocolate and butter are melting, add the eggs and sugar (don't forget the sugar!) to a bowl and beat together with an electric whisk! Whisk it until pale and thickened, making sure to whisk it in a figure of 8 motion! You'll know when it's done as you will be able to drip the mix down from the whisk and make a ribbon-like patterns on top of the rest of the mix!
  • Whisk in the melted butter and chocolate mixture, adding a portion of the mix at a time (get someone to pour it in for you! It makes it far easier!)! Then, whisk in the sifted flour and cocoa powder together! Stir in the salt, vanilla extract and white chocolate chips (chop the bar up with a knife!)!
  • Pour the mix into the prepared tin from earlier, making sure it is evenly spread about the tin! Bake for 25-30 minutes until the top is crusty and cracked! Once out of the oven, check that it is done by sticking a knife into the centre of the brownie! Take the knife out! If it's mostly clean then your brownie is done! If not, give it a tad bit longer!
  • Leave brownies to cool! If you have put chocolate chips or other additions such as marshmallows into the brownie, immediately put the brownie in the fridge to speed up the cooling process! If left to cool on the counter with additional ingredients in them that can melt, they will have melted by the time the brownie goes cool!
  • Once completely cool, lift out of the tin with the edges of the baking paper (or leave it in the tin! Up to you!) and cut into pieces! Store these pieces in an airtight container in your fridge! They can be reheated if you wish to have them warm! Enjoy!
