Hollandaise Sauce!

Goes great with eggs benedict!

Ingredients:

  • 125g Butter
  • 1/2 tsp White wine vinegar
  • 2 Egg yolks
  • Squeeze of Lemon juice
  • Cayenne pepper
  • Instructions:

  • Melt the butter in a pan, making sure to skim any white solids from the surface of the butter! Keep that butter warm!
  • Put the egg yolks, white wine vinegar, a splash of water and a pinch of salt in a heatproof bowl, and prepare a bain-marie (to barely a simmer)! Whisk together the ingredients for a few minutes, and then put it over the barely simmering pan of water, making sure you continuously whisk it until its pale and thick! This should take 3 to 5 minutes!
  • Remove the bowl from the heat and slowly whisk in the butter a bit at a time until it has all been incorporated! It should result in a creamy hollandaise! If it feels too thick, add a splash of water! Add a pinch of cayenne and a squeeze of lemon juice to add some flavour, and then keep it warm until you need it! I hope you enjoy!
