Mint Slice!

Ingredients:

  • 350g Icing sugar
  • 150g Butter (unsalted)
  • 400g Digestives
  • 100g Condensed milk
  • 2 tsp Peppermint extract
  • Green food colouring
  • 300g Milk chocolate
  • 2-3 tbsp Water
  • Instructions:

  • Line a 9x9 (or whatever sized dish you have!) baking dish with baking paper and set it aside!
  • Put the Digestives into a big plastic/metal bowl and with either a food processor or a rolling pin, blitz/break up the Digestives until they are a fine crumb!
  • Melt the butter and condensed milk together in a saucepan!
  • Add the butter and condensed milk mix to the Digestives and blitz together/mix with a wooden spoon!
  • Press the biscuit into the bottom of the dish and pop it in the fridge while you put the icing together!
  • Mix together the icing sugar, peppermint extract, and food colouring together in a bowl! Add the water - a little at a time - as to get the paste to just the right amount of thickness and spreadability! Too much water will make the icing runny!
  • Spread the icing over the biscuit base and try to get it as evenly spread as possible! Then leave it in the fridge to chill for an hour and go do something else!
  • Melt the chocolate in a heatproof bowl over a bain-marie! Once melted, pour over the icing, making sure not to disturb it! To reduce the risk of disturbing the icing, you can leave the melted chocolate to cool for a little bit first! Pop the dish back in the fridge and leave it until the chocolate is completely cooled and set! This can take anywhere from 1 hour to 2 hours, so be patient!
  • Once the chocolate has set, take the dish out of the fridge and lift it out by the baking paper! Place it onto a chopping board and cut it into 16 pieces! Enjoy!
