To prepare, quarter, core and shred the red cabbage! Then half the red chillies, deseed them and chop them up! For the root ginger, peel and finely slice it! As for the spring onions, top and tail them and then finely slice them!
Put all the ingredients apart from the sesame seeds, sesame oil and spring onions into a large pan with a lid on top, and bring it to a simmer!
Cook the contents of the pan over a low heat for 20-25 minutes until all the liquid has evaporated, stirring it regularly! Then continue to cook it until the juices in the pan become very sticky and glaze the cabbage!
In a separate, smaller pan, toast the sesame seeds over a low heat until golden, making sure not to burn them as they will burn very quickly!
Stir through half of the toasted sesame seeds and spring onions!
When you go to serve it, sprinkle over the remaining sesame seeds and spring onions and drizzle the sesame oil over the top! Enjoy!
