Start by preheating your oven to 200C/fan 180C/gas mark 6! Peel the potatoes and grate them into a large plastic/metal bowl of water! When grating, make sure the you only grate downwards as going both down and up on the grater with the potato can damage the quality of the gratings!
In s small saucepan, melt 50g of butter of a low heat!
Once the butter is melted, drain off the potato gratings and squeeze the water out of them, getting as much water out of them as you can! Place them into a new bowl, or to save on washing up you can use the same bowl! Just make sure to dry it first!
Add the melted butter to the potato gratings and mix it in with your hands! Then mix in some salt and pepper!
Take 2-4 cookie cutters/ring moulds of a round shape and decent size and lay down a tea towel on a clean surface!
Place a handful of potato gratings into the ring mould and press it down into a flat circle, squeezing any excess starch out as you do! Make sure to get it all out before frying! Repeat until all the gratings have been used up!
Put on a frying pan onto a medium-high heat and add oil/butter/frylight to the pan! Get the oil/butter/frylight sizzling hot before adding as many röstis to the pan as you can at once!
Fry the röstis on both sides until golden brown and place them onto a small oven tray! Repeat for the other röstis if you did not get them all in one go!
