Ganache (For Decoration!)!

This version is ideal for things like chocolate truffles! Makes 750g!

Ingredients:

  • 85g Unsalted butter
  • 300ml Double cream
  • 350g Dark chocolate couverture
  • 20ml Spirit or liqueur
  • Instructions:

  • Add the cream to a saucepan and bring it to the boil!
  • Chop up the couverture into small pieces and add them to a metal/plastic bowl! Pour the cream over the couverture and whisk it with a hand whisk or an electric one until the chocolate has melted!
  • Cube up the butter and whisk it into the mix along with the liqueur!
  • Stir the ganache over a bowl of ice until the mixture has the required consistency that you are after! Cover it up and pop it in the fridge for later use if that's what you want! Enjoy!
