Choux Paste!

This can be used for recipes such as éclairs, profiteroles and gâteau Paris-Brest! Makes 750g!

Ingredients:

  • 100g Butter
  • Salt
  • 250ml Water
  • 4-5 Eggs
  • A pinch of Sugar
  • 150g Strong flour
  • Instructions:

  • Crack the eggs into a measuring jug and beat them!
  • Add the water, sugar, salt and fat to a saucepan and bring them to the boil! Then remove the pan from the heat!
  • Sieve the flour into a bowl and then mix it into the saucepan mixture with a wooden spoon!
  • Return the pan to a moderate heat and stir it continuously until the mixture leaves the sides of the pan! This is called a panada!
  • Remove the pan from the heat and allow it to cool!
  • Gradually add the beaten eggs to the pan, beating it well into the mixture! Never add all the egg at once, and make sure you check the consistency as you go! You'll know when its done as the mixture should flow back when moved in one direction! All of the eggs might not be needed!
  • Cover and place the paste into the fridge until it's use! Enjoy!
