Ingredients:

  • 230ml Caster sugar
  • 190ml Pasteurised egg whites
  • Instructions:

  • Bring a pan of water to the boil, and then turn it down to a simmer! Whisk the pasteurised egg whites and sugar together in a bowl over the simmering bain-marie until you get a light and aerated meringue! Cover it up, chill it for whenever it is to be used, and enjoy!
