Use whatever flavourings you like! Maybe even multiple! Makes 1 litre!

Ingredients:

  • 500g Caster sugar
  • 10g Lemon juice
  • 1 litre of Fruit puree
  • Instructions:

  • Add the puree to a pan and warm it on the hob! In a separate pan, boil the sugar along with a little bit of water to the soft-ball stage! Which is 121 degrees!
  • Pour the soft-ball sugar into the warm fruit puree, making sure to whisk it vigorously as you do! Add the lemon juice to a pan and bring it back to the boil to reduce to your desired consistency!
  • Store the coulis in your container of choice and pop it in the fridge for when you need it! Enjoy!
