Ingredients:
500g
Caster sugar
10g Lemon juice
1 litre of Fruit puree
Instructions:
Add the puree to a pan and warm it on the hob! In a separate pan, boil the sugar along with a little bit of water to the soft-ball stage! Which is 121 degrees!
Pour the soft-ball sugar into the warm fruit puree, making sure to whisk it vigorously as you do! Add the lemon juice to a pan and bring it back to the boil to reduce to your desired consistency!
Store the coulis in your container of choice and pop it in the fridge for when you need it! Enjoy!
