Fresh Egg Custard Sauce!

Also known as Sauce à L'anglaise! Makes 300ml!

Ingredients:

  • 25g Caster sugar
  • 2-3 drops Vanilla extract
  • 40ml Pasteurised egg yolks
  • 250ml Whole or Skimmed milk
  • Instructions:

  • Add the milk to a saucepan and bring it to the boil, making sure to watch it as milk can boil over very easily!
  • In a large bowl, mix together the egg yolks, sugar and vanilla! Then, whisk in the boiled milk and pour the contents of the bowl back into the saucepan (or a thick-bottomed one if you have it!)
  • Place the pan onto a low heat and stir it with a wooden spoon until the back of the spoon is coated! You gotta make sure the mix absolutely does not boil, as this will result in scrambled egg! You can use a probe to make sure the mix doesn't go over 85C!
  • Strain the mix through a fine sieve and into a clean bowl! Place the bowl over some ice to seize the cooking process and chill the custard rapidly! Once chilled, cover and place into the fridge for when you wanna use it! Enjoy!
